Делаю сметанный крем, взбиваю долго он не густеет, почему и как исправить или бежать за другой смета

У меня тоже сметанный крем самый любимый, но раз на раз не приходится:) На днях на одном форуме прочитала, что есть загуститель сметаны и сливок (можно и то и другое), он в пачках типа разрыхлителя, желе и т.п.

Ну если сметана жирная, то он загустеет после того, как постоит в холодильнике

С теперешней сметаной он может и не загустеть. Я обычно и не добиваюсь густого крема, лучше бисквит пропитается. Знаю, что некоторые перед готовкой, сметану в марле подвешивают над миской, чтобы влага стекла.
